Polygons
Three wines, three varieties, three terroirs, one single vineyard.
Wines that express their place of origin
In 2013, we began a period of in-depth research in our vineyard, which led us to subdivide and classify it by geological origin. These subdivisions were made based on electroconductivity data, laboratory studies, visual analysis of soil profiles and an exploration of differences within the same plot and they led us to identify three unique polygons in one valley.Subsequently, we harvested the grapes from these three polygons at different times to obtain both fresh and ripe profiles. We made wine from these three areas by separating them into small batches. Under strict fermentative controls, we used a mixture of selected yeasts to emulate a native starter culture. Once the fermentation was complete, we identified the batch that best expressed each site. Each of the three wines followed a different, classic ageing regime.
